That being said I also have Fring and Gizmo, not to mention Jaiku (granted it isn't really a chat client but it is a presence based app) so I guess the one big thing is settling on a mobile IM solution that works best.

I do use Nokia Chat regularly ... both on my E71 and via Digsby and Adium on the computer. It's a great way to filter what IM contacts I see on the mobile though I look forward to seeing additional protocols supported which has to be coming given the slow adoption pace of Ovi. Jabber support is nice so you can add your Gtalk clients pretty easily but so far it's all manual which is not great via mobile. Much easier on the PC side which then are shared with your mobile device.
I find Fring and Gizmo are annoying more than helpful and I don't really like either's UI. I do like the VOIP options which can be convenient for some, but when traveling internationally my company is paying for my mobile connection anyway now.

Giving Nokia Chat the ability to sign into other IM services (even if it is just other Jabber services) would make it more compelling to me. It would also be really handy to be able to scan my contacts for other Nokia Chat/Ovi users.
